
Saucy Dumplings – High Protein Quick Meal
When you want a dinner that feels like a hug in a bowl but also hits the protein needs, this is the one. This Spicy Peanut Dumpling Bowl has become my go-to "I don’t want to cook but I want to eat well" meal. It uses freezer staples like Bibigo dumplings and Costco edamame, but the real star is the elite peanut sauce that brings it all together.
Ingredients
The Base
- 10 Bibigo Dumplings
- 1/2 Packet Frozen Edamame
- 2 Eggs
The "Elite" Peanut Sauce
- 1 tbsp Peanut Butter (creamy works best)
- 1 tbsp Soy Sauce
- 1 tsp Sriracha (adjust based on spice tolerance)
- 1 tsp Hoisin Sauce
- 1 tsp Sesame Oil
- 1/2 tbsp Chili Crisp
The Flourish
- Spring Onion Greens (chopped)
- Roasted Sesame Seeds
Instructions
- Prep the Proteins: Boil your dumplings according to the package instructions. While the water is boiling, steam your edamame and prep your eggs.
- Whisk the Sauce: In your serving bowl, add the peanut butter, soy sauce, sriracha, hoisin, sesame oil, and chili crisp. Whisk it until it forms a smooth, glossy sauce.
- The Big Mix: Toss the hot dumplings and steamed edamame directly into the bowl with the sauce. Mix it all up until every single piece is beautifully coated.
- Assemble & Flourish: Top the bowl with your halved eggs. Finish with a generous sprinkle of spring onion greens and roasted sesame seeds.
- Voila! Serve immediately while the sauce is warm and creamy.
If you want to make this even "greener," you can toss in a handful of baby spinach at the end—the heat from the dumplings will wilt it perfectly!
If it's too thick, add a spoonful of the dumpling boiling water to thin it out
